INGREDIENTS

Left over or store bought Rare roast beef or rare steak

333 sweet beets halved

baby spinach and rocket lettuce mix

pink Radish thinly sliced

1 tin brown lentils

Danish blue cheese

Red onion thinly sliced

Dressing:

White wine vinegar

Honey

Olive oil

seeded mustard

1 garlic clove crushed

Salt and pepper

Salad-Ingredients

METHOD

Whisking

To make dressing whisk together all ingredients until well combined and season with salt and pepper.

Salad-Assembly

To assemble the salad start by placing the lentils and spinach mix in a bowl, add beetroots, red onion and radish.

Blue-Cheese

Finish by tearing the beef, crumbling the blue cheese and drizzling with dressing.

INGREDIENTS

1 can cannellini beans

2 tbl 333 BBQ sauce

2 tbl 333 tomato sauce

1 can crushed tomatoes

1 tbl apple cider vinegar

1 tbl brown sugar

salt and pepper

1 onion diced

4 garlic cloves crushed

1 tsp smoked paprika

2 tsp chipotle chilli powder (optional)

olive oil

sourdough to serve

Chipotle-Bean-Ingredients

METHOD

Chipotle-Beans-Step-1

Heat a large crockpot or saucepan on medium and drizzle with olive. Add brown onion and sauté until translucent.

Chipotle-Beans-Step-2

Add garlic cloves and sauté for a further minute before adding paprika and chilli powder.

Chipotle-Beans-Step-3

Add cannellini beans as well as remaining ingredients and simmer for 10 minutes.

Smokey-Chipotle-Beans

Season to taste with salt and pepper.

Serve with crispy toasted sourdough.

INGREDIENTS

1 jar 333 apple sauce

300ml plant based coconut yogurt – plain or vanilla

100g store bought apple granola

¼ cup almond butter

10 dried dates – soaked in water for at least 10 minutes

1 tsp vanilla

pinch salt

1 tsp cinnamon

1 pink lady apple – diced

1/2 tbl brown sugar

toasted coconut chips – optional

Apple-Parfait-Ingredients

METHOD

Apple-Parfait-Step-1

To make the apple compote heat a small saucepan to medium heat and add diced apple

Apple-Parfait-Step-2

Add brown sugar, cinnamon and vanilla and cook until caramelized – take off the heat and allow to cool.

Apple-Parfait-Step-3

To make the almond date caramel blend together almond butter, dates and salt until smooth.

Apple-Parfait-Step-4

Add a generous spoonful of yogurt In the bottom of a mason jar (I like to use recycled well washed 333 jars) or a short glass.

Apple-Parfait-Step-5

On top of the yogurt add a layer of 333 apple sauce, then add a scoop of the stewed apple, almond caramel and sprinkle with granola.

Apple-Parfait-Step-6

Continue layering until you reach the top finishing with granola and date caramel has the final layer. Add coconut chip on top for additional yum. Serve immediately or if eating the next day omit the granola until last minute.

INGREDIENTS

2 Chicken breasts cubed

½ cup 333 BBQ sauce + extra for brushing

1 jar 333 pickled onions halved

1 capsicum cubed

olive oil

salt and pepper

Skewar-Ingredients

METHOD

Marinate-Chicken

In a small bowl mix together chicken breast and BBQ sauce and season well with salt and pepper. Allow to marinate for at least 1 hour.

Nic-making-skewars

With a bamboo or metal skewer pierce a piece of chicken, followed by a piece of capsicum and then the pickled onion. Repeat this until you get to the end of the skewer.

Skewars-on-bbq1

Heat either a BBQ or a fry pan to high heat. If using a BBQ drizzle the skewers with some olive oil, if using a frypan drizzle the olive oil directly into the pan.

Cooking-skewars

Cook for 5 minutes on each side basting with extra BBQ sauce.

INGREDIENTS

400g hummus

1 jar 333 stuffed olives – drained

100g semi dried tomatoes –

50g Dukkah

100g feta

Handful chopped parsley

Juice of 1 lemon

1 red onion – finely chopped

drizzle olive oil

toasted lavosh or crackers to serve

Loaded-Hummus-Ingredients

METHOD

Spead-Hummus

To assemble spread hummus evenly over either a medium serving board or plate.

Add-Olives

Start by sprinkling with semi dried tomatoes, red onion and olives.

Drizzle-Oil

Next crumble the feta and drizzle with olive oil.

Drizzle-Lemon

Finish by squeezing over some lemon juice and sprinkle with dukkah and chopped parsley.

Hummus-with-crackers

Serve with crackers, fresh bread or toasted lavosh.
