- 1 cup chopped watermelon 1 cup peeled tomato
- 1 punnet washed and hulled strawberries
- 1 jar 333’s Beetroot Super Strips ½ cup chopped fennel ½ cup chopped onion 100ml lemon juice
- ½ chopped cucumber
1 clove of garlic
½ green chilli
Salt and cracked pepper to taste
Blend all ingredients together for 1 to 2 minutes leaving out half the jar of beetroot strips and half the punnet of strawberries. Chill gazpacho for half an hour before serving. Top with remaining beetroot strips and cut strawberries to finish with a beautiful light salad.
