    Serves 4

    INGREDIENTS

    • 3 grated zucchinis drained
    • ½ cup self-raising flour
    • ½ cup grated Parmesan
    • 2 whisked eggs
    • ¼ cup chopped flat leaf parsley
    • Salt and cracked pepper to taste
    • 4 teaspoons olive oil
    • ½ jar 333’s Old Style Pickled Onions
    • ¼ cup tahini paste
    • 2 tablespoons lemon juice
    • ¼ cup chopped shallots
    • Handful leafy greens

      PREPERATION

    Place the tahini, 2 tablespoons olive oil, lemon juice, salt and pepper in a bowl and whisk. Set aside to serve with fritters. In a bowl, mix grated zucchini, self-raising flour, 4 chopped pickled onions, Parmesan, French onions, egg, parsley, salt and cracked pepper. Heat remaining olive oil in a non-stick frying pan. Drop zucchini mixture in frying pan to desired size. Brown for 2 minutes each side or until golden. Transfer to a baking tray and once all the fritters have been cooked, finish them all together in the over at a low temperature for up to 5 minutes. To serve hot fritters drizzle with lemon tahini and serve with green leaves tossed with remainder of pickled onions thinly sliced for crunch.
