Beetroot, Asparagus and Fetta Salad

INGREDIENTS

350g Asparagus, trimmed & boiled 

1C Mixed salad leaves  

250g 333s Original Cubed Beets, drained 

200g Fetta cheese, crumbled 

1/2C Walnut halves, toasted  

Lemon dressing: 

1 clove garlic, crushed 

1/4C olive oil 

1 ½ tablespoons lemon juice 

Salad-Ingredients

METHOD

Whisking

1. Boil, steam or microwave asparagus until just tender; drain.  

Salad-Assembly
2. Lightly toast walnuts in oven.  

 

Blue-Cheese

3. Add all ingredients for lemon dressing into a screw-top jar and shake well. Put aside.  

Whisking

4. Place asparagus in large bowl with salad leaves, beetroot, three-quarters of the cheese, and nuts; toss gently to combine. Top with remaining cheese and dressing.
