PASSIONFRUIT TARTS
ingredients
1 cup plain flour
1 cup wholemeal flour
1/4 cup caster sugar
180g chopped butter (very cold)
1 egg yolk
1/3 cup iced water
preparation
Heat oven to 200°C
Add flour, caster sugar and chopped butter into food processor and buzz until it looks like bread crumbs. Add 1 egg yolk and 1/3 cup of ice cold water. When mixture clumps empty onto a lightly flour board, knead mixture until smooth. Cut in half and wrap in plastic and put in the fridge for 1/2 hour.
Roll out pastry and cut to fit patty pans (NB the curved bottom ones suit this recipe better)
Bake for a few minutes until edges are beginning to brown
Remove from oven, place 1/2 teaspoon of passionfruit butter in each tart
Return to oven, until butter has melted and pastry is brown |
